The Fermentation Lab is based in the cellar of our 300 year old stone farmhouse. Here we explore fermentation as a nexus of art, science and everyday sustenance.

Fermented hot sauce, lactofermented vegetables from the garden, water and milk kefir, beer, elderflower and berry wine, kombucha and sourdough are always on the go — amongst other experiments.

Nanobrewing

We brew craft beer for our guests and volunteers. Our setup can produce batches of 120–400 x 50cl bottles. We also have dispensing and chilling equipment for 18L Cornelius kegs.
